1 can organic garbanzo beans, rinsed and drained
1 can organic black beans, rinsed and drained
1 cup seedless cucumber, chopped
1 apple, cored and chopped
1 pear, cored and chopped (or another apple)
2 large stalks of celery, sliced thin
2/3 cup Vegenaise (or your favorite mayo)
1 Tblsp honey or sugar
1 1/2 tsp dry dill
Salt and pepper to taste
- Gently pat the beans dry with a clean towel.
- Add all the beans, vegetables, and fruits into a large salad bowl.
- Combine the vegenaise, sweetener, dill, salt, and pepper into a small mixing bowl and blend well.
- Pour the dressing over the top of the salad and toss to coat.
