Brown Rice and Pine Nuts

Love this recipe from my friend Jo Ellen.  The kids and I spent a couple days at her house when I was hugely pregnant with Gigi.  She and Matt did all the cooking and Matt kept Jack entertained.  Ahhh.  Sweet vacation!

               Brown Rice with Pine Nuts

               1/2 cup pine nuts, lightly toasted
               1 Tblsp canola oil
               1 onion, diced
               1 clove garlic, minced
               1 cup organic brown rice
               2 cups organic chicken broth
               Salt and pepper to taste
    1. Carefully toast the pine nuts, then set aside.
    2. Saute the onions over medium heat until nearly tender.  Add the garlic and saute another minute.  Add the rice and pine nuts and stir to coat.
    3. Add the chicken broth, salt and pepper.  Bring to a boil, then reduce heat, cover, an cook for 45 minutes until the rice is done.  Serves 4.
I also love this recipe with wild rice.  To use wild rice, just substitute 1/4 of the brown rice with your favorite organic wild rice blend.
