Brown Rice with Pine Nuts
1/2 cup pine nuts, lightly toasted
1 Tblsp canola oil
1 onion, diced
1 clove garlic, minced
1 cup organic brown rice
2 cups organic chicken broth
Salt and pepper to taste
- Carefully toast the pine nuts, then set aside.
- Saute the onions over medium heat until nearly tender. Add the garlic and saute another minute. Add the rice and pine nuts and stir to coat.
- Add the chicken broth, salt and pepper. Bring to a boil, then reduce heat, cover, an cook for 45 minutes until the rice is done. Serves 4.
I also love this recipe with wild rice. To use wild rice, just substitute 1/4 of the brown rice with your favorite organic wild rice blend.
