Gosh I love her. I think I say that every time I post about her. First, a little update. School is going really well. We only have the occasional battle of "It's boring!". Next year I plan to join either a homeschool co-op or put the kids in a private university model school for one day a week. I just want to add a little more spice in their homeschool life. Plus, Gigi will be old enough to skip her nap on occasion and we will be able to do more fun things like the homeschool ice skating and hockey lessons.
She's doing great in gymnastics and recently advanced to level 3 in swim class, too. I'm beginning to see a bit of that competitive spirit in her. Put her in a situation where she isn't the best, and she grows quickly.
Below is her newest kitchen creation. It's a recipe spin-off recipe of Avacado Chocolate Pudding - which Jack loves. Sounds weird, but try it. Just try it. ;-) She sat down with pen and paper a few days ago and said, "I need to create a new recipe today." I had lemons on the counter intended for Greek Lemony Chicken soup and avocados waiting to be chopped into guac, but I was happy to donate them for the sake of her creativity. This recipe is delicious. Even better than the chocolate pudding. It tastes kind of like that lemon layer on top of lemon bars. Yummy! And the texture is just luscious. (Please excuse the less than stellar photo below. The kids wouldn't let me have that bowl long enough to get a decent photo.)
Lemon Avocado Pudding
1 ripe banana
1/4 cup fresh lemon juice
1/4 cup honey (or sugar)
Add all the ingredients to a food processor or high speed blender and blend until smooth. Serve immediately. If you would prefer it cold, cover and chill for an hour first.

ReplyDeleteI just tried this recipe and it is DELICIOUS! We can't have dairy at our house, so we normally don't get to have pudding. Plus I've been trying to get Luiza to eat avocados to fatten her up a bit. This recipe worked great for both needs. It went over fantastic. The texture is so creamy and the flavor is wonderful. Good job Aislinn! This is going to be a frequent go-to of mine.
