Jack's Favorite Sloppy Joes

Oh Finally!  A meal that the whole family LOVES and no one is allergic to.  Happy dance!  And it's healthy (in my opinion, anyway).

Jack's Favorite Sloppy Joe's
12 servings

Ingredients
2 lbs grass-fed organic ground beef (or lean ground beef)

1 large onion, finely chopped
3 cups green cabbage, finely chopped
2 medium carrots, finely chopped
1 green pepper, finely chopped
1 red pepper, finely chopped
1.5 cups prepared lentils
1.5 cup safe ketchup
2 tablespoons brown sugar (optional)
3 teaspoon Worcestershire sauce
3 teaspoon prepared mustard
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 teaspoon Real salt


Directions
In a large, heavy-bottom pot, begin cooking beef over medium heat.  Chop the vegetables and add to the pot as you finish chopping.  Add the lentils.  Continue cooking until the beef is cooked through and the vegetables are almost soft.  Stir in the ketchup, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder and salt. Bring to a simmer, cover, reduce heat to low. Let sit for 15 - 20 minutes.  Serve over safe toast.



Notes
For Jack - we use Food For Life's Brown Rice bread to make toast, then top it with Earth Balance.  For Aislinn and everyone else, we use Ezekiel Sprouted grain wheat bread or homemade whole wheat bread.  You could also serve this over a prepared brown rice.
For beef, we use organic, grass-fed, ground beef.  It is naturally lean and does not need to be drained.  If you use something else, you may need to drain the excess fat off when you are cooking. 
For salt, I love Real salt brand natural sea salt.  If you are using plain iodized salt, you will want to decrease the amount of salt.  At least that's my opinion.  Iodized salt seems saltier to me and... harsher?? than natural sea salts like Real salt.
